Cauliflower crust pizza

This weekend, I attempted a new recipe for this pizza crust. I made mine half with tomato sauce and half without. I used most of the techniques and recipe amounts from another blog, Detoxinista.com.
I adapted her crust recipe, but NOT her wonderful techniques. I did not want to splurge for goat cheese mozzerella, so I substituted
2 heaping Tablespoons of low-fat cottage cheese(just what I had) and 1 heaping tablespoon of regular mozzarella. Also, I added a second pinch of salt.

For the crust:

  • 4 cups raw cauliflower rice (about one medium head) see the link to the other blog for detailed instructions to make this)
  • 1 egg, beaten
  • 2 heaping TBSP cottage cheese
  • 1-2 heaping TBSP mozzarella chesse
  • 1 teaspoon dried oregano
  • 2 pinches of salt

For the remainder of the pizza:
  • tomato sauce (I use premade)
  • 1 or so cups of mozzarella cheese
My little guy ate a piece of the tomato without stopping, he ate about half of a cheese only piece before telling me he did not really like this. I liked it, myself. I am going to try to get him to try another piece tomorrow.
